Just Beet It…And then Roast it!

Welcome to Day 6 of the #plantfueledyoga challenge

Beautiful, beautiful beet. How mighty you are, with your red flesh and beautiful greens! The beet really is a super food full of iron,  high in nutrients and vitamins, and they have nitrates that help our body with many, many things (circulation, recovery, cell growth).

So, let’s put these beets to good use…in our bellies!

Roasted Beets with Thyme

3 medium or 2 large Beets
1 1/2 tablespoons of olive oil 2 tablespoons of Thyme

Preheat oven to 375

Peel your beets with a peeler. Yes, peel them! Just get the dirty skin off.

Chop up your beets into cubes. Watch the counter tops – they will stain!

Throw in a bowl with the Thyme & Olive Oil.

Put onto a roasting pan or dish and cook for about 30 minutes. Stir. May need a bit more time, depending on how crunchy you like yours.

Put on salads, eat as a side dish, enjoy the detoxing goodness!

 

Your Detoxifying Yoga Challenge: Prasarita Twists

This pose is super delicious – for everything! One of my favorite stretches for sure.

Come sideways on your mat, straddling your legs wide. Bring your hands above you and then bend from the waist to reach the ground. Breathe here.

Bring your left hand slowly to your right ankle. Be gentle here, so as not to strain your back. If you would like, bring your right hand to your hip or to the sky. Feel the stretch! Breathe here for at least 5 breathes.

Walk your hands back to the center of the mat, then over to the left side, for twisty goodness.

Remember to be kind to your body. Listen to what it tells you. And take care of the insides, as well as the outside.
